At 8475 Michael Cherry Avenue, Suite 120, there is now a glass case of dry-aged steaks, heritage pork and house-made sausage, with butchers behind it who will tell you how to cook what they just cut. The Wise Ox opened there on Thursday, October 22. It is a chef-driven butcher shop, deli and pantry from Trust Restaurant Group, and the Las Vegas Review-Journal reported it as the first Wise Ox outside Southern California.
For anyone in Mountain's Edge, Southern Highlands or Rhodes Ranch who cooks at home, the opening also changes how a Sunday at UnCommons works. The Las Vegas Farmers Market sets up there every Sunday from 10 a.m. to 2 p.m., and The Wise Ox is open Sundays too. Produce, baked goods and a butcher counter are now open at the same time in the same development, once a week. With Thanksgiving falling on Thursday, November 26, that four-hour Sunday overlap becomes the anchor of the holiday shopping week.
What's in the Case on Michael Cherry Avenue
The shop's Las Vegas page lists premium beef, heritage pork, lamb and free-range chicken, the same meats served across the group's restaurants, all hand-cut by its butchers. The pantry shelves carry spices, rubs and marinades. The shop's opening announcement, embedded in the Review-Journal's coverage, describes the shop as "old-school butchery" for "the modern home cook." The same post lists house-made sausages, stocks, marinades and dry-aged steaks, and ends with "Restaurant-level sourcing. For your kitchen."
The dry-aged steaks come from an in-house aging program, according to launch coverage from FB101. Aged cuts sell through on their own schedule, so if a specific steak is the centerpiece of a dinner, call the counter at 725-269-4733 or email [email protected] before you drive over.
The steakhouse connection is right next door. Chef Brad Wise also runs Rare Society, which opened its UnCommons location in July 2025, according to the Review-Journal. In practice, the beef behind the steakhouse dinner and the beef in the butcher case come from the same chef's operation, across the same development.
The Deli Side Runs on a Shorter Clock
The sandwich counter closes an hour before the butcher case. The shop is open Wednesday through Sunday from 10 a.m. to 6 p.m., with sandwiches served until 5 p.m. The website also takes sandwich orders online.
The Review-Journal listed the opening menu:
- A breakfast sandwich of sausage, fried egg, American cheese and hot honey on a challah bun
- Peppered turkey with Swiss and chipotle aïoli on toasted sourdough
- Smoked bologna and American on challah
- A cheesesteak of shaved New York strip, American and sweet pickled peppers on an Amoroso's roll
- Roast beef and Havarti with horseradish cream on rye
- A double cheeseburger, plus a dry-aged burger with bacon, Havarti and house pickles
- French fries cooked in beef fat
The breakfast sandwich makes sense on a Sunday. The farmers market opens at 10 a.m., the same hour as the shop, so you can eat breakfast and do the produce run in the same trip.
Where the Two Schedules Overlap
The Wise Ox is closed Monday and Tuesday. Most of UnCommons' public food events land on weekends. Here's how the two calendars line up from now through Thanksgiving week, using UnCommons' published November 2026 events calendar:
| Date | At UnCommons | The Wise Ox |
|---|---|---|
| Sunday, Nov. 1 | Las Vegas Farmers Market, 10 a.m. to 2 p.m. | Open |
| Saturday, Nov. 7 | Market in the Alley, 6 to 10 p.m. | Closes at 6 p.m. |
| Sunday, Nov. 15 | Las Vegas Farmers Market, 10 a.m. to 2 p.m. | Open |
| Saturday, Nov. 21 | The Art of Pie, 11 a.m. to 2 p.m. | Open |
| Sunday, Nov. 22 | Las Vegas Farmers Market, 10 a.m. to 2 p.m. | Open |
| Mon. to Tue., Nov. 23 and 24 | No market | Closed |
| Wednesday, Nov. 25 | No market | Open, 10 a.m. to 6 p.m. |
Market in the Alley starts as the butcher shop closes. UnCommons describes it as 50-plus vendors, a small-business shopping night more than a grocery run. The Sunday market has the produce. UnCommons describes the Las Vegas Farmers Market as the same team behind its markets at Downtown Summerlin and The District at Green Valley Ranch, bringing fresh seasonal produce, handcrafted gifts and fresh-baked goods.
So the Sunday before Thanksgiving, November 22, is the last day before the holiday when the market and the butcher counter are open together. After that comes a two-day gap with the shop closed, then one more shopping day on Wednesday the 25th.
Building Thanksgiving Week Around That Gap
One way to plan the week around the posted hours:
- Saturday, Nov. 21, 11 a.m. to 2 p.m. "The Art of Pie: A Community Gathering" runs at The Assembly at UnCommons. The listing describes it this way: "Sweet or savory, pies bring everyone together over the holidays."
- Sunday, Nov. 22, 10 a.m. to 2 p.m. Shop the farmers market for produce and bread, then pick up sausage, stock and any cuts that can hold in your refrigerator until Thursday. It's also the time to settle a larger roast order in person at the counter.
- Monday and Tuesday, Nov. 23 and 24. The Wise Ox is closed. Anything you forgot on Sunday waits until Wednesday.
- Wednesday, Nov. 25, 10 a.m. to 6 p.m. Final pickup. Sandwiches stop at 5 p.m., which is handy if the kitchen at home is already busy.
Thanksgiving Day hours aren't posted, so call ahead before counting on a Thursday-morning stop.
The company runs a "Holiday Meat Shop" page. It lists a dry-aged standing rib roast at $54.99 per pound, along with filet, chateaubriand, whole tenderloin, bone-in short ribs, brisket, chuck roast and cowboy ribeye, plus a "PRE-ORDER PRIME RIB" link. The page lists pork roasts and lamb cuts too, but it doesn't name a store, a deadline or a pickup date. The shop also has locations in San Diego and Carlsbad, so before you count on that page, ask the Las Vegas counter whether its holiday preorders run through Michael Cherry Avenue and when your order would be ready. A standing rib roast for a December dinner is a cut worth reserving rather than hoping to find in the case.
The Weekend After, and Into December
The Saturday after Thanksgiving, November 28, Lady Bakez teaches a Fall Cake Class at UnCommons from noon to 1:30 p.m. It costs $65 and includes a six-inch, three-layer fall-themed cake and a box to take it home in. The farmers market returns the next morning, Sunday, November 29.
December keeps the same rhythm. Market in the Alley returns Saturday, December 5, from 6 to 10 p.m. The Las Vegas Farmers Market is on the December calendar every Sunday, December 6, 13, 20 and 27, from 10 a.m. to 2 p.m. All four are Sundays, when The Wise Ox is also open. That leaves four more Sunday overlaps before the end of the year, including December 20, the last Sunday before Christmas.
For a holiday roast, that December 20 Sunday plays the same role November 22 plays for Thanksgiving. It's the last day before the holiday when the market and the butcher are open together on one block, and the day to have your order already confirmed with the counter.
The Wise Ox started in San Diego in 2020, according to the Review-Journal, and the Las Vegas shop opened only a week before this post. Hours and holiday offerings at a new store can change in its first weeks, so the shop's Las Vegas page and @thewiseoxlv on Instagram are the places to check before you make the drive.
Part of knowing the southwest valley well is knowing which shops make a weekly routine easier, and a new butcher counter at UnCommons is a fine example.
